A tonkatsu specialist in a quiet corner of Higashi-Ginza, near Tsukiji. We fry sangen-buton loin and tenderloin — one cutlet at a time, by hand.
A light, crisp panko crust outside; juicy pork within. That is enough. Each set comes with shredded cabbage, rice and miso soup.
No standing counter — you sit down to eat. There is a counter and there are tables. A short walk from the Tsukiji outer market: the market is loud, the room stays calm.
The Counter
Sangen-Buton, Fried to Order.
Sangen-buton loin and tenderloin, fried only once you order — so it arrives hot, crisp outside and juicy within. Simple, and only that.
